UYUNI - In a dusty town at the edge of the world’s largest salt flat, near an abandoned railroad stop some 10,000 feet above sea level and 12 hours by dirt road from the capital of South America’s poorest country, there’s a restaurant where the walls are covered with Massachusetts license plates, posters of Boston, and Red Sox paraphernalia.
